Lemon Yogurt Cake with Truvia

This cake is particularly exciting to me because I’m sweetening it with my beloved Truvia sweeteners. I’m a regular Truvia stevia user, but this time, I’m going to be baking my cake with Truvia’s Monk Fruit Sweeteners that they recently introduced. Just like their stevia sweetener, Truvia Sweet Complete Granulated Monk Fruit Sweetener is a zero-calorie, zero-sugar alternative. Whether you use stevia or monk fruit, they both make perfect substitutes for sugar in every recipe you make and it is simply a matter of preference. Since I like to try new things, I was eager to give the new monk fruit offering a try, and I was not disappointed.
Monk Fruit Sweeteners are made from monk fruit extract, a calorie-free sweetener that comes directly from the fruit itself. It’s super versatile and is used as a sweetening ingredient in all kinds of foods and beverages or in tabletop sweeteners. I used Truvia Sweet Complete Granulated All-Purpose Monk Fruit Sweetener for my lemon yogurt cake recipe. It measures cup-for-cup like sugar, and it bakes and browns in recipes just like sugar, too!
almost time to dive into the cake recipe, but before I do, I just have to say that the best part about making this cake with Truvia Sweet Complete Granulated All-Purpose Monk Fruit Sweetener is that I was able to create a delicious cake with all the texture and flavor that I love in traditional decadent desserts but with fewer calories and sugar. I try my best to strike a balance and live life to the fullest, and Truvia helps me do that.
Cake Ingredients:
1 1/2 cups all–purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain whole–milk yogurt
1 1/3 cups Truvia Monk Fruit Sweet Complete Granulated All–
Purpose Sweetener
4 eggs
2 teaspoons grated lemon zest
1/2 teaspoon vanilla extract
1/2 cup vegetable oil
1/3 cup freshly squeezed lemon juice
Icing:
1 cup Truvia Sweet Complete Confectioners Sweetener
2 tablespoons freshly squeezed lemon juice
Sliced lemon for garnish
Directions:
Begin by preheating your oven to 350 degrees F. Spray an 8×4–inch loaf
pan with baking spray and set aside.
In a bowl, whisk together the flour, baking powder, and salt. In another
bowl, whisk together the yogurt, 1 cup of Truvia Monk Fruit
Sweet Complete Sweetener, eggs, lemon zest, vegetable oil, and vanilla
extract.
Pour the batter into the prepared pan and bake for about 50 minutes or
until a toothpick inserted near the center comes out clean.
When the cake is done, allow it to cool in the pan for about 10 minutes.
For the glaze, combine the Truvia Sweet Complete Confectioners
Sweetener and lemon juice. Drizzle over the cake once cooled. Enjoy!
